<p>There&#8217;s a <a href="http://www.austintown.k12.oh.us/~aust_tr/homework/quickfiles/Cartoons/15%20cows%20eating%20grass!.bmp" target="_hplink">funny cartoon</a> out there of some cows in a pasture eating grass. One cow&#8217;s head is lifted up with a sense of horror on his face and the caption reads, &#8220;Hey wait a minute! This is grass! We&#8217;ve been eating grass!&#8221;</p>
<p>Have you ever been sitting at a meal with someone, or even by yourself, and been halfway through the meal without having tasted the food? In my experience, the odds are likely that you&#8217;ll be nodding your head up and down. Our heads are simply often somewhere else, worrying about where we need to be, watching television, or engrossed in conversation.</p>
<p>This unawareness is the seed for making poor food choices, not to mention missing out on enjoying the food. This unawareness can also drive people to overeat as a way to cope with unacknowledged feelings and emotions. You may be in search of a &#8220;quick fix&#8221; that consists of caffeinated beverages and highly-refined foods that burn very quickly and spike up the metabolism.  </p>
<p>Many people have learned to comfort and sedate themselves with food. Sadly, our &#8220;super-size&#8221; culture not only supports these tactics but also capitalizes on it.</p>
<p>Since preparing and eating food is such an essential component of our lives, why not bring mindful awareness to this?</p>
<p>In the &#8220;Now on Your Diet&#8221; chapter in <a href="http://www.amazon.com/gp/product/1451623860/ref=as_li_tf_tl?ie=UTF8&#038;tag=mindfulmoment-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1451623860">The Now Effect</a> I talk about a client who suffered from stomach pains, always complaining of a sensitive stomach. I told him that <a href="http://en.wikipedia.org/wiki/Thich_Nhat_Hanh" target="_hplink">Thich Nhat Hanh</a>, the Vietnamese Buddhist Monk, has a system where he suggests chewing the food 30 times before swallowing (you don&#8217;t count after you practice a few times). When he tried this he began noticing that his stomach didn&#8217;t hurt quite as much anymore because his food was broken down so much prior to hitting his stomach.</p>
<p>I had another client that suffered from a food addiction and would often be found going to the bakery daily, buying a cake, and eating it that night. We practiced mindful eating with a raisin in session to experience the concept of slightly slowing down with the eating and beginning to bring all the senses to the food.</p>
<p>She took time seeing it, touching it, smelling it, hearing it and tasting it. She considered all the hard work it took by many people (including her own for having the resources to pay for a session to do this) to get this simple raisin in front of her today. In time, along with other work we did, she was able to slow down her eating and begin to eat in smaller portions with a greater sense of appreciation for her food.</p>
<p>Another client I did this practice with said, &#8220;I&#8217;ve been downing raisins my whole life in handfuls, one after the other. And it wasn&#8217;t until now that I realized, I don&#8217;t even like raisins.&#8221; This was The Now Effect in action. </p>
<p>We both had a good laugh.</p>
<p>Go ahead and try this out for yourself. Whether you&#8217;re eating a snack or a meal, try to slightly slow down your eating, bring your senses to the food as if you were noticing this food for the very first time. Consider all the work that it took by so many to get it there today (including you). Whatever you do, don&#8217;t take my word for it, try it out for yourself!</p>

<p>On April 17, the California Homemade Food Act (AB 1616) &#8212; more commonly known as the California Cottage Food Bill &#8212; passed the California Assembly Committee on Health, bringing small food operators in California one step closer to being able to legally provide their communities with healthy, home-grown food products.</p>
<p>&#8220;Cottage foods&#8221; are foods that are made in someone&#8217;s home kitchen and sold on a small scale, typically directly to consumers and at farmer&#8217;s markets. Cottage food laws typically allow only foods that are classified as &#8220;non-potentially hazardous foods&#8221; in state and federal laws &#8212; meaning that they are not conducive to the growth of harmful bacteria or other toxic micro-organisms. Those items can include baked goods (with no cream, custard or meat fillings), jams and jellies, granola, popcorn, nut mixes, roasted coffee, herb blends, candy, honey, dried fruit and dried pasta.</p>
<p>This bill comes with controversy.</p>
<p>Christina Oatfield, food policy director for the Sustainable Economies Law Center (SELC), the nonprofit that helped push the California bill forward, says the main issue small food producers are grappling with &#8212; and one of the reasons why this bill is so important &#8212; is that commercial kitchens are extremely expensive to rent, lease or own. In urban areas they can cost anywhere from $30 to $70 per hour to rent and in rural areas they are very sparse. This makes starting a small food business very cost prohibitive, especially in this economy.</p>
<p>Some contend that if a food producer cannot afford these hourly rates, it is likely that the project is underfunded anyway and may not be able to survive.</p>
<p>If the bill makes it all the way through the state Senate and is eventually signed into law by Gov. Brown, cottage food producers will be required to take a food safety class and pass an exam (the same that is required for employees of commercial kitchens) in order to operate their food business, empowering them with the information they need to handle food safely. Products will also need to have a label, as the Health Department will define in further detail, that includes a list of ingredients, the location where the product was made and any allergy information. There may be some required statement that says the product is homemade, too. All good requirements.</p>
<p>&#8220;Advocates of this bill believe that it&#8217;s not necessary for a health inspector to take the time to inspect a home kitchen making cookies for a bake sale or making jam to sell to friends and neighbors. On the other end of the spectrum, a facility that is processing food to be distributed all over the country should have some very substantial oversight by the health department including inspections, training and other safety requirements,&#8221; Oatfield says. &#8220;I think government regulation really needs to be scale-appropriate.&#8221;</p>
<p>I believe that all food companies, large and tiny, have a food safety responsibility and every food processing facility should be inspected &#8212; what do you think?</p>

<p>This Saturday, May 19, will be the first-ever global Food Revolution Day. I can not tell you how proud I am that we have more than 500 cities in 57 countries around the world standing up for real food.  And it couldn&#8217;t be a more important time for it.</p>
<p>According to the World Health Organization, global obesity has more than doubled since 1980 and more than tripled in children. Across the world more than 1.5 BILLION adults are overweight and of those 200 million men and 300 million women are obese.  We are in big trouble.</p>
<p>Despite these grim statistics, and general shouting about the problem across the world, no one &#8212; not government, schools or doctors &#8212; have worked out a plan to give our children the tools to live longer, healthier, happier and more productive lives. Our kids are the first generation predicted to live shorter lives than their parents.  As a father this is unacceptable to me &#8212; and should be unacceptable to you.</p>
<p>Food Revolution Day is an opportunity for everyone around the world to do something.  The Food Revolution and Food Revolution Day is about empowering people through education or, frankly, just inspiring people to be more street-wise about food, where it comes from and how it affects their bodies. If you know how to cook you can save yourself money, feel better and live longer, and the chances are, your kids will follow suit. After all, we all kind of become our parents in the end.</p>
<p>I started learning about food at the age of five in the kitchen at my Dad&#8217;s pub. It was 1980, and about one in every 15 people in the UK was obese. Just 30 years later, and it&#8217;s almost one in every four people. It&#8217;s the same story throughout the world and, in some places, even worse. The truth is that our priorities have completely changed during that time. That&#8217;s okay &#8212; with progress they change every 50 years or so anyway &#8212; but we have lost touch with real food and the time has come to re-adjust.</p>
<p>Everyone paying taxes, whether they&#8217;re a parent yet or not, should feel confident that when they send their children to school they will be fed right, educated about food and taught the skills they need to set them up for life. </p>
<p>Many people in the last three generations weren&#8217;t taught to cook at home or at school, and that has certainly contributed to the crisis. For 10 years I&#8217;ve seen the positive impact that learning about food can have on our communities, our lives, our happiness, health and self-confidence, so why aren&#8217;t the governments or schools mandating food education?</p>
<p>It&#8217;s not that difficult. In Australia, I&#8217;m working closely with a big business that has donated millions to help communities &#8212; millions that have been match-funded by government and resulted in a whole raft of clever, strategic initiatives that will help to make good food and food education available to all.</p>
<p>On May 19, thousands of people around the world will come together &#8212; businesses, schools, sports stars and celebrities &#8212; to hold events, dinners and cooking classes, with the aim of putting good food back on the agenda. We want to change the way people eat by educating every child about food, giving families the skills to cook from scratch again, and motivating people to stand up for their right to better food.</p>

<p>We promise our college students a lot these days. We promise them a quality education, access to top professors and an intellectually active campus. We promise them the opportunity to think critically, build their leadership skills and express their creativity. We want them to have a solid foundation for the road ahead. And yet we have overlooked one of the most basic, fundamental skills anyone can have for leading a healthy and successful life.</p>
<p>We forgot to teach them how to cook.</p>
<p>In a nation where diet-related deaths have increased dramatically and eating has become not only a personal issue but a social and political one, we are not teaching students one of the easiest ways to improve the quality of their life and the vitality of their communities.  We have to <a href="http://www.dormroomdinner.com/2011/10/kitchen-and-good-life.html" target="_hplink">start eating well</a>.  And the only way to eat well is to know how to cook.</p>
<p>When I became interested in cooking during middle school, I had no idea what a difference it would make in my life. Cooking allowed me to take control of a large part of my life.  In my case, it gave me the skills to start a <a href="http://www.dormroomdinner.com/p/about-me.html" target="_hplink">catering business</a> with a friend during high school, has been a large part of my social and extracurricular life at college, and has allowed me to eat well, whenever I want and with whatever resources might be available to me.</p>
<p>Many colleges throughout the country are already doing great work that allows their students to eat better. At Wesleyan University, where I attend, the dining service (we use <a href="http://opinionator.blogs.nytimes.com/2011/05/10/the-future-of-cafeteria-food/" target="_hplink">Bon AppÃ©tit Management Company</a>) is working with student groups to ensure twenty percent of the food used in campus dining halls is sourced from local vendors. Half an hour away, the <a href="http://www.yale.edu/sustainablefood/" target="_hplink">Yale Sustainable Food Project</a> runs an organic farm, looks into academic issues related to food and works with the sustainable dining program for their university. Additionally, projects like Alice Waters&#8217; <a href="http://edibleschoolyard.org/" target="_hplink">Edible Schoolyard</a> bring middle-school students into the garden and the kitchen for lessons in cooking and healthy eating. These and other programs are real steps in the right direction towards getting us to eat better and improve our relationship with food and with our communities.</p>
<p>But even at these universities, too many students leave college without any knowledge of how to cook for themselves. <a href="http://www.dormroomdinner.com/2010/10/are-we-becoming-lazy-cooks.html" target="_hplink">Learning how to microwave</a> instant ramen is not a cooking skill.  When we enter the real world, we need to be able to provide for ourselves. We aren&#8217;t cooking or feeding ourselves in a way that is sustainable for our own lives, our communities or our country. When frozen dinners and fast food drive-by windows have become a norm in many households, we need to make a change. We need to teach people how to cook.</p>
<p>These skills, of course, should not only be provided to those fortunate enough to attend college. But college is a particularly appropriate place to educate our youth about food and cooking for a variety of reasons. For one, colleges have a concentration of individuals about to enter the real world with the time and interest to partake in activities that improve the quality of their lives. Otherwise they wouldn&#8217;t be at <a href="http://www.dormroomdinner.com/2011/08/college-packing-list-drd-style.html" target="_hplink">college</a>. Many colleges already have programs in place to improve the quality of students&#8217; relationship with food. Why should a skill as basic as cooking not be included in these initiatives? Colleges should offer cooking lessons and activities that teach students how to cook. Additionally, colleges are often a catalyst for social change. If we are going to change the way America eats, we should empower our college youth to take part in that change.</p>
<p>The food movement today is alive as ever and is improving the way we eat in real and significant ways.  Much of the focus so far has been on greater availability of fresh, healthy food and on encouraging everyone to eat better, whether through making better choices at the grocery store or improving lunches at public schools. These are all vitally important steps in the process. But we must focus on teaching people how to cook food. The food movement cannot exist without everyone being able to take home fresh, local <a href="http://www.dormroomdinner.com/2011/07/quick-fix-dinners-summer-roasted-tomato.html" target="_hplink">produce</a> and make a delicious meal from it. The process of actually cooking is the most personal way we can connect with the food movement. We have a nation of college students waiting to learn how. Let&#8217;s teach them.</p>

<p>Tuck in that napkin, and leave your appetite behind, because once again it&#8217;s time to explore the marvels of&#8230; Bad Restaurant Food Photography!</p>
<p>The purpose of a restaurant is to make food that will entice customers. The purpose of a professional photographer is to capture beautiful images. Why do they do it? What I discovered from an assignment for Coed Magazine is that some restaurants insist on taking their own photos of food found on the menu. The result is sometimes the opposite of what was intended: it actually repulses people from eating at the establishment. Simple Formula: If you&#8217;re not a good photographer, don&#8217;t take pictures of the food you&#8217;re selling.</p>

<p>Last week The Lunch Box crew checked in with The School Food Project of the Boulder Valley School District (BVSD) in Boulder, Colo., to see how they are going to celebrate Food Revolution Day.</p>
<p>Thrilled at the chance to showcase the delicious school lunches the district provides and the opportunity to educate the students on food topics &#8212; BVSD has decided to make May Food Revolution Month! With many activities planned and lots of delicious, healthy food to go around &#8212; the events are all sure to be a great success.</p>
<p>Jamie Oliver&#8217;s Food Revolution Day is time for action! It is a chance to gather communities to learn, teach, and share about all things healthy food. Find more information on the event page here and perhaps even register some of your own events in their calendar!</p>
<p>In Boulder, a multitude of schools will be taking part in chef demos, healthy school lunch sample days, and Rainbow Days.  Events like these help students connect to the healthy school food that is served in their lunch room. During a Chef Demo, a meal is created and cooked in front of students. This allows children to see the ingredients and watch the meal being prepared &#8212; making them more likely to give it a try. Chef demos are especially effective when &#8220;celebrity&#8221; chefs are brought in from popular local restaurants. Sample days give students the chance to try a dish without having to buy a whole school lunch. This lets the kids decide on their own if they would like to purchase a school meal &#8212; and lets delicious school meals speak for themselves!</p>
<p>Rainbow Days are great for schools that have salad bars. This event encourages students to try a variety of colors of fruits and vegetables from the salad bar. On Rainbow Day, students are all offered a side salad at the salad bar for free &#8212; whether they are getting lunch from school or brought lunch from home. At the salad bar they are encouraged to choose at least three different colors of the fruit and vegetable rainbow for their tray. If they eat everything they have gathered from the salad bar, they receive a special &#8220;I Made a Rainbow&#8221; sticker. </p>
<p>During Food Revolution Month at BVSD &#8212; the school gardens are getting in on the fun as well! Many of the schools with gardens in the district are using their first harvest of lettuces to add to the delicious salad bar offerings. This act of bringing produce from school gardens to the cafeterias gets kids excited about food and their part in the process. <p>Here&#8217;s a great quote from a mother whose child came home with an &#8220;I Made a Rainbow&#8221; sticker recently:  </p>

Jasper came home talking about his &#8216;rainbow&#8217;, requested and ate plain lettuce with his dinner, and when he was still hungry after dessert, went and made himself another &#8216;rainbow&#8217; with lettuce, grapes and strawberries. His 4-year old sister copied him and both kids polished off their entire bowlful of healthy stuff. I am SO impressed with this program!</p>

<p>It is very important to engage children in healthy food activities. Getting kids into the kitchen and out to the garden gives them an appreciation for food that will last them a lifetime. Be sure to involve children in your Food Revolution Day activities!</p>
